Discount Supplements Easter Treats – Gluten Free Cupcakes

Last week I was offered the chance to try out a recipe for some Gluten Free Cupcakes. I have always wondered what Gluten Free cakes taste like so I thought I would give them a shot. One of the mums from my childrens school is Gluten Free and she posts lovely photos of cakes, biscuits and treats that she makes on her Facebook page and they are all Gluten Free and look lovely. Its something I have always wanted to try so I can compare them to my normal style of cupcakes that I make so this week I decided to make some Gluten Free Easter Cupcakes.

Here is the ingredients and recipe that I used for my Gluten Free Cupcakes. I used some smooth almond butter from Discount Supplements for the cupcake icing.

Here is the Ingredients for the Discount Supplements Easter Treats Gluten Free Cupcakes

  •  125g (4oz) butter, melted
  •   125g (4oz) caster sugar
  •   125g (4oz) gluten-free self-raising flour
  •   2 medium eggs
  •   3tbsp milk
  •   Few drops of vanilla extract
  •   Eggs to put on top/decorations (flowers)

Ingredients for the Buttercream

  •   2 egg whites
  •   150g caster sugar
  •   100g Nuts N More Almond Butter
  •   Few drops of vanilla extract
  •   12-hole bun tray, lined with paper cases
  •   Piping bag

Once you have all your ingredients ready this is all you need to do:

  1. Set the oven to 190°C.
  2. Pour the melted butter into a bowl and add sugar, flour, eggs, milk and vanilla extract. Beat the mixture, an electric whisk, to give a smooth batter which may appear a little runnier than a usual sponge-cake mixture.
  3. Spoon mixture into the paper cases in the bun tray.
  4. Bake cakes in the center of oven for 18-20 mins, or until they’ve risen and are light golden.
  5. Remove tray from the oven and leave cakes to cool for a few minutes, then transfer to a wire rack to cool completely.

 

Eastercakes

The cupcakes were lovely, the children really liked them and with the added excitement of them being Easter cakes the children did not even realize they were gluten free. Both of my children love cakes and biscuits and I was sure they would notice but they didn’t.
